Ika Shiokara
关于咸鱼
Japan is surrounded by the sea on all sides and fish has always been a central part of the Japanese diet. With appreciation of the ingredients, fish has been enjoyed throughout the nation as a processed food that makes the most of local flavours. Odawara City is no exception. It has been famous throughout the country for its excellent fishery ports since the Nara Period. We are proud of our Shiokara. It is a food in Japanese cuisine made from various marine animals that consists of small pieces of meat in a brown viscous paste of the animal's heavily salted, fermented viscera. The raw viscera is mixed with about 10% salt and 30% malted rice, packed in closed containers, and fermented for up to a month. We continue to pursue deliciousness based on fresh raw materials and light salt processing.
